Summertime Tomato Salad

8 servings

2 Pints Fresh cherry tomatoes

1 Cantaloupe

½ C. crumbled Feta cheese

2 C. torn, tender Butter or Bibb lettuce

Zest of 1 lemon

 

2 Tbls. Balsamic vinegar

¼ C. Olive oil

¼ C. chopped, fresh Basil leaves

Salt and fresh ground pepper, to taste

 

Cut tomatoes into halves with a sharp, serrated knife.  Place in a large bowl.  Scoop out cantaloupe with a melon baller and add to tomatoes.  (You can also just cut the fruit into small chunks, but the balls look prettier!)  Add the feta cheese, lettuce and lemon zest.  Toss gently to combine.  Pour mixture into a salad bowl or clear glass serving bowl.  Cover and refrigerate.

 

In a separate bowl, whisk together olive oil and vinegar.  Continue whisking and add basil, salt and pepper.  Cover and refrigerate.

 

Pour vinaigrette over salad immediately before serving and toss to coat well.
