Simple French Toast for Two

 1 eggFrench Toast

1/2 C. Milk

3 T. Flour

1 tsp. baking powder

1 tsp. sugar

Dash of salt

4 slices of bread. Preferably dense, thick bread

Vegetable oil for frying, about 1/2 C.


Break the egg into a medium sized, wide bowl and whisk briefly. Sprinkle in baking powder, sugar and salt and whisk again for about 30 seconds. Sprinkle flour over liquids. Continue whisking while pouring the milk into the bowl.


Pour the oil into a heavy bottomed  skillet and heat over medium heat. Dip bread slices into batter and press both sides into the liquid to coat well. Drain excess batter off of slices as you lift them out and place carefully into heated oil. Cook approximately 1 minute on each side, or until lightly brown and crisp. Place toast briefly on a paper towel to absorb extra oil and then onto serving plate. Serve immediately with choice of toppings. Mmmm . GOOD MORNING!
