Monster CookiesMakes 60 large cookies


1 lb. brown sugar

2 cups sugar

½ lb. (1 cup) sweet cream butter

6 eggs

1 ½ Lbs. peanut butter

1 ½ tsp. pure vanilla extract

4 tsp. baking soda

9 cups old fashioned oats (not quick cooking)

½ lb. m & m candies

½ lb. semi-sweet chocolate chips

Preheat oven to 325 degrees, convection bake.  Prepare baking sheets, lining them with Silpat sheets, if available.

Using a scale, weigh out candy and chocolate chips (place together in a small bowl and set aside)

Then weigh peanut butter and place in another small bowl.

Place the 1 lb. brown sugar, 2 c. sugar and butter in a very large mixing bowl.  Using a paddle attachment of a stand electric mixer (if available) blend the sugars with the butter until smooth and creamy, about 5 minutes.

Add the weighed out peanut butter to the large bowl and mix again to blend evenly.

Add vanilla and, baking soda and blend until smooth.

 By hand, add oats gradually, mixing until the oats are evenly distributed throughout the batter. Then sprinkle in the candy and chocolate chips and mix gently to distribute throughout the dough.

Scoop out 1/4 cup cookie portions and place on baking sheets.  Bake in the preheated oven, approximated 10 – 12 minutes.  Remove baking sheets from oven and allow cookies to cool a few minutes on the baking sheet.  Then move to a cooling rack to cool completely.

This recipe is great to use for large gatherings, bake sale donations or family snacking!

Dough can be refrigerated to bake cookies at a later time.

Baked cookies freeze well.
