Homemade Vanilla Ice Cream

A wonderful and simple vanilla ice cream!

4 eggs

2 ¼ C. sugar

4 cups whole milk (or more)

2 Tbls. pure vanilla extract

4 C. heavy whipping cream

½ tsp. salt

1 scant tsp. almond extract

 

 

In a large bowl, with an electric mixer, beat the eggs well.  Add the sugar and continue to beat.  Add extracts, salt and whipping cream.  Add 4 C. whole milk and beat one more time.  Pour this into an ice cream makers’ canister and add additional milk if the canister needs to be filled more.  Follow the manufacturer’s instruction to make the ice cream.  If using an electric ice cream maker, a half recipe will make one batch!
