Cranberry Apple Casserole

Some people actually use this as a dessert…I can’t argue with that!  But it is a wonderful Thanksgiving side dish that adds color and flavor to your plate.



4 C. uncooked, washed fresh cranberries

6 C. peeled, diced Granny Smith apples (apple pieces

should match the size of the cranberries)

2 C. sugar



1 C. packed, light brown sugar

1/3 C. all purpose flour

2 C. old fashioned oatmeal (NOT quick cooking)

1 ½ C. chopped pecans

1 ½ C butter, cut into chunks


Preheat an oven to 275 degrees

To make the filling…

Place all filling ingredients in a large bowl and toss together to coat the fruits with sugar.  Place the mixture into a 9 X 13 inch baking dish.

To make the topping…

Wipe out the bowl, place the 1 ½ C. butter in it, and microwave until the butter is just melted.  Add the rest of the topping ingredients and mix with a spoon to combine.  Place handfuls of the topping onto the filling, then pinch and move lightly until the surface of the filling is covered.  Don’t pack the topping against the filling – leave it to sit loosely, for a better texture.

Bake in the preheated oven for 1 ½ hours.
