Banana Crunch Muffins

I ALWAYS end up with over-ripe bananas on my counter…and I struggle to just throw them away when I have some great recipes to use them in.  Here’s a delicious muffin from Ina Garten!  I usually “tweak” recipes I find, in order to personalize and improve them, but this one is just perfect, as is.  I hope you will enjoy it as much as I do.

 Muffin 1

Preheat an oven to 350 degrees.  Line 18 large muffin tins with paper baking liners.


3 C. all-purpose flour

2 C. sugar

2 tsp. baking powder

1 tsp. baking soda

½ tsp. salt

½ lb. (2 sticks) unsalted butter, melted and cooled

3 large eggs (or 2 extra large)

¾ C. whole milk

2 tsp. pure vanilla extract

1 C. mashed ripe bananas (2 bananas)

1 additional ripe banana, diced in small pieces

1 C. chopped walnuts

1 C. granola

1 C. shredded, sweetened coconut
